VEGAN CORN MUFFINS

Prep: 5 mins Cook: 15 mins. Ingredients: 1/2 cup whole wheat flour 1/2 cup cornmeal 1/2 cup apple sauce 1/2 cup vanilla soy milk 1/4 cup agave 1/2 tsp. baking soda 1/2 tsp. salt 2 tbsp. canola oil

Instructions: Pre-heat over to 325 F and lightly spray muffin tin to avoid sticking Mix cornmeal, flour, baking soda and salt. Add the soy milk, agave and applesauce. Slowly add oil while stirring. Mixture is ready to pour into muffin pan. Bake for 15-20 minutes. Use a knife or toothpick to check if muffins are ready. If knife/toothpick comes out without dough on it, then muffins are ready.
